At Kaki Douraku Oyster Shack, we bring our fresh sazae (turban shell), awabi (abalone), a variety of other seasonal live shellfish and processed marine products every week directly from the local fishermen and Japan Fisheries cooperative in Nagasaki, the owner’s hometown.
Live shellfish are transported and kept in the local seawater they were harvested in so they stay as fresh as they had been.
Once in the restaurant, they go through multiple sterilization processes including double filtration tanks, an ozone generation device and UV generation device, then they are kept in the fish tank where the cleanliness and the temperature of the seawater are maintained with great care (Not stored in the refrigerator). It is our commitment to work continuously to ensure the quality of our products until they are served to our customers.
